What’s the difference between a Pickled Pigs Foot and a Pickled Pork Knuckle? About one inch and a bunch more meat. What’s the difference between a hock and knuckle? Nothing and I’d appreciate it if you’d cease this line of questioning. Red Smith Foods pickled knuckles are slow-cured for over a week, sprinkled with a pinch of love, then packed whole into each jar before any flavor can escape. In over 30 years of business, we’ve only had one flavor escapee – unfortunately it only made it to the wall where it was promptly swallowed up by our guard dogs.
